Let’s Eat: Raspberry Peanut Butter Rice Cake Bites

One lazy Sunday morning, I was in the mood for a light breakfast. I did a quick kitchen scan and saw rice rollers, peanut butter, and raspberries. It didn’t take long to put something together, and I figured I’d share it with you all!

Ingredients:

  • Raspberries
  • Organic Peanut Butter (or whatever peanut butter you’d like. Do you!)
  • Bamboo Lane’s Crunchy Rice Rollers (or any rice cakes that are already cut up)

 

Directions:

  • With a sharp knife, cut the Rice Rollers into shorter cylinders.
  • Spread peanut butter on top of each rice cake.
  • Place a raspberry atop each peanut butter-covered rice cake.

Obviously, this snack is super easy to make and even easier to eat. I love pairing it with a steaming cup of Oprah Chai. It also makes a great side to whatever breakfast you’re having!

    i LOVE those rice cakes. the peanut butter and fruit are a great way to add nutritional value to them!

      Hey, Vicki! I used an incredibly sharp knife. I remember initially trying with a butter knife and failing miserably!
